In commemoration of World Food Day 2021, an event titled Pasar Tiban #1 Purbayan has taken place on Sunday (17/10). The event, which was organized by the Kota Purba Asri Farmers Group with Panen Apa Hari Ini and Struggles for Sovereignty, took place at the Purba Asri Farmers’ Land and Mataram Lumbung Coffee, Kotagede, Yogyakarta.
The event was opened with morning exercises, which were carried out together at 07.00 a.m, then followed by the opening of the Tiban Market and a chat session with the city’s farmer groups. As the main event, several workshops were held to expose various processing innovations from local harvests.
Mama Fun, also known as Marlinda (Kujawas Lakoat Community, Timor), was a guest star in the first workshop, who demonstrated the making of special dishes from her native region; sambal luat and corn bose. This activity is part of the residency held by Biennale Jogja XVI Equator #6 2021.
“This is my first time to Yogya. I’ve only been to Jakarta. There is already a restaurant that uses sambal luat. Sambal luat is fermented chili sauce, not fresh chili that is ready to be made. I’m trying to introduce the real sambal luat,” said Mama Fun when asked about the reason for demonstrating how to cook the dish.

Accompanied by music by DJ Ayash Laras, Mama Fun then added that the general time to ferment sambal luat is at least three months before consumption. The longer the fermentation time, the more delicious it will become.
“The variety of sambal luat depends on what ingredients you want to use. Many of its ingredients can be found in people’s gardens, such as garlic’s sambal luat, bamboo shoots, galangal flowers, and many other kinds. But the main ingredients are only chilies, oranges, and salt,” explained Mama Fun further.
In addition to the spicy taste, there is also a sour and garlic sensation that is dominant in the Sambal luat. To accompany the sambal, Mama Fun also demonstrated how to make corn bose as a typical Timorese dish, apart from white rice which is, of course, more commonly known by the Indonesian people.
Aside from the cooking demonstrations from Mama Fun, there is also an orchid cultivation workshop by Mr. Suryadi (PPL Kotagede District, Yogyakarta City Agriculture Office).
